Poultry 

Chicken is probably our "go to" meat and we still enjoy a roast chicken dinner on Sundays fairly often.  This supplies wonderful leftovers which can then be converted into Chicken Enchiladas or Clubhouse sandwiches.

Highlights

When we want comfort food, Chicken Smothered with Onions or the Braised Chicken with White Wine and Mustard are good bets.  

Tuscan ChickenIf we feel like spicy, we'll pick the Lime Chicken with Poblano Sour Cream.  The Sticky Coconut Chicken has a wonderful Asian style and goes really well with a cold, smooth Semillon wine.

My all-round favourite though, is Tuscan Chicken, with its complex layers of Parmesan coated chicken, fresh spinach and lemony mayo, served with tomato crostini. Mamma mia!
